Peanut butter is one of my favourite kitchen staples. Any nut butters really, although I haven’t done much experimenting with the others. Nuts are packed with healthy, brain developing fats, and protein, and iron (among other amaze vitamins/nutrients). As we are raising a couple of VegHeads, I look for ways to include them often. This can be tricky because the younger they are, the harder it is for them to chew them up and swallow them. At this toddler stage they both love to chew them up, but then they spit them out because they don’t feel comfortable swallowing the hard pieces.
So here are 2 of my favourite PB filled recipes!
Peanut Butter Oatmeal Balls
2 c. Oatmeal (really, any kind would probably work for this, I just used a quick cook)
1/2 c. Peanut Butter (again, any nut butter you fancy, we like all-natural/chunky)
1/2 c. almond milk (or your preferred “milk”)
2 tsp. baking soda (you can leave this out in a pinch, but they won’t be as fluffy)
3 tbsp. agave nectar (or honey, if you’re down with that)
1/4 c. dark chocolate chips (or carob chips, or raisins, or whatever)
1. Mix the oatmeal and pb first so that the pb can get on all of the oatmeal and spread out evenly.
2. Mix in the agave nectar and baking soda.
3. Mix in the milk slowly. You might not use it all, or you might need a bit more. This will depend on what kind of oats you used. If it’s doughish not liquidy you are good! (yes, I feel that those are very accurate descriptors;)
4. Add the chips! Yum!
5. Scoop into balls on a cookie sheet, and bake for 15 minutes on 375°
Peanut Butter Cereal Balls
2 c. cereal of your choice (we used O’s)
1/2 c. pb
1/4 c. agave nectar (or honey)
1/4 c. bran
This one is pretty straight forward. Just mix it together with a spatula (the spatula is gentle and won’t destroy your cereal). If it’s not sticky enough, add a little more pb. If it’s too sticky add a little more bran or cereal.
Use your hands to make gloppy balls on a cookie sheet or plate, and then pop them in the fridge. When they harden up a bit you’re good to go!
